Mini Apple Pancakes

INGREDIENTS

PANCAKE MIX:

-1/3 cups + 1 tbsp milk

-2 tsp butter, melted

-1 egg

-3/4 cups all-purpose flour

-1 3/4 teaspoons baking powder

-1/4 tablespoon monkfruit

- salt to taste

-2 fuji apples (due to its sweetness)

-365 salted caramel sauce

INSTRUCTIONS

1. Whisk wet ingredients in a bowl or use a mixer. In another bowl, mix dry ingredients. Then mix wet and dry together.

2. Wash and slice your apples. Scoop the core out with a melon baller.

3. Heat a lightly oiled griddle or pan over medium-high heat. Dip your apple slices into the pancake mix and place in the griddle; cook until bubbles form and the edges are dry, about 3 to 4 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.

4. Add salted caramel sauce and other nuts as toppings.
