Enchiladas Suizas
An enchilada suiza is a type of enchilada made with a creamy, white sauce that is typically made from sour cream or crema mixed with chiles. I was born and raised in Mexico and out of all the enchiladas I have tried, enchilada suiza is my favorite type of enchilada.

INGREDIENTS
-4 corn tortillas
-3/4 cup shredded chicken
-Manchego cheese, mozzarella, or Oaxaca.
SAUCE
-3 tomatillos
-2 tbsp Mexican cream
-1 tbsp Philadelphia cheese
-1/4 cup chicken broth
-1/8 white onion
-1/2 serrano peppers
-1 clove garlic
-cilantro
-salt and pepper
-1 tsp olive oil to fry sauce
INSTRUCTIONS
1. Boil the tomatillos and serrano until they change color.
2. Blend all the sauce ingredients. Add some olive oil to a medium size pan over medium heat. Fry the sauce for a couple of minutes then place half of the sauce in a baking pan and the other in a dipping bowl.
3. Warm the tortillas before building the enchiladas. To build them, dip each corn tortilla in the dipping bowl with the sauce, then add chicken, and form the enchilada by rolling and placing it seam-side down in the baking pan. Repeat with the remaining tortillas.
4. Add the remaining of the sauce to the baking pan and add cheese as a topping. Bake at 350F for 20 min until cheese is melted.
5. Garnish with some cilantro if wanted. Serve hot.
