INGREDIENTS
-3/4 cup cooked quinoa
-3.4 oz chickpeas
-1/4 english cucumber
-cherry tomatoes
-1/3 bell peppers
-1/4 red onion
-1 tbsp fresh cilantro
-1/5 tbsp olive oil
-1 tsp apple cider vinegar
-2 tbsp of goat cheese
-kosher salt and pepper to taste
-4 oz cooked shredded chicken
INSTRUCTIONS
*Cook shredded chicken and quinoa prior to making this salad
1. In a salad bowl, add quinoa, chickpeas, cucumber, cherry tomatoes, peppers and red onion. Mix well.
2. Then add cilantro, olive oil, apple cider vinegar, salt and pepper to taste. Lastly, add goat cheese.
