Beet Hummus
If you love hummus, you are also going to love this ‘pink’ hummus. This dip is very flavorful and beautiful. In addition, the beets add great nutrients to this recipe; making it a very healthy option for snacking! It is also a great option for gatherings and to entertain your guests.

INGREDIENTS:
-1 cup chickpeas
-1 beet (boiled)
-2 tbsp tahini
-1 tbsp minced garlic
-1/2 tsp pepper
-1/2 tsp salt
-1 lemon
-2 tbsp olive oil
TOPPINGS
-sesame seeds
-feta cheese
-olive oil
-nuts
INSTRUCTIONS:
1. Bring a large pot of water to a boil. Wash the beets. Then trim off all but about 1 inch of the beet greens. When leaving on the stem it helps keep the beets from “bleeding” out too much red.
2. Add the beets and boil for 20 to 40 minutes until tender when pierced with a knife.Allow the beets to cool and place them under cool water in order to rub off the skins with your fingers.
3. Blend all the ingredients in a food processor or blender. Add some water so it blends better, 1-2 tbsp. Then add all toppings.
