Coconut Shrimp🍤
This coconut shrimp is so creamy, delicious, and easy to make. It is a recipe full of Thai inspired flavors. This recipe is gushing with shrimp, coconut milk, parsley, garlic, and ginger. It does not take very much time to make at all, in only 20 minutes it is done!

INGREDIENTS
SHRIMP SEASONING:
-1lb raw peeled shrimp
-salt and pepper to taste
-1/2 tsp smoked paprika
-2 tsp olive oil
CREAM:
-6oz coconut milk (shake it well)
-1/4 small yellow onion (finely diced)
-4 cloves garlic (minced)
-1/2 tsp ginger (minced)
-2 tomatoes (diced)
-some parsley
TOPPINGS:
- squeezed lime juice
-chopped parsley for garnish
INSTRUCTIONS
1. Heat some olive oil medium-high in a pan.
2. Season raw shrimp with salt, pepper, and smoked paprika in a mixing bowl. Mix well until shrimp is fully coated.
3. Add shrimp to the pan and cook for about 2-3 min each side or until shrimp is pink and cooked through. Remove shrimp from heat
4. Heat the rest of the olive oil in a plan and add ginger, onion, and garlic. Sautee for one minute. Then add the tomatoes and let it simmer for 5 min.
5. Add coconut milk after having shaken it well. let it simmer for a couple of minutes then add cooked shrimp and simmer for 5 minutes or until cream thickens.
6. Add some lime juice and garnish with parsley.
